Vata Pacifying Kitchari Recipe.

Kitchari is a popular meal in Ayurveda. It is a mixture of lentils and grains that are cooked down to a consistency that is easy to digest. Because of this, it is ideal to eat during a cleanse and is also recommended as a baby’s first meal. While it is typically considered to be balancing for all dosha’s, this recipe is specifically great for reducing Vata.

*         1 cup white basmati rice

*         1 cup yellow mung dal

*         3-4 teaspoons of Garam Masala( this spice mix tends to be spicy, but is great for pacifying Vata)

*   1 teaspoon of Natural Mineral Salt

*         2 tablespoons ghee or sesame oil if you are vegan

*         6-7 cups water depending on how soupy you like you kitchari to be.

*         1–2 cups of cubed and peeled pumpkin

Yields about 5 servings


Soak your dhal and lentils overnight for optimal cooking. This will remove ama (toxins) and decrease cook time.

Peel and cube enough fresh organic pumpkin to make about 1-2 cups. This may take some time so you might want to do it the night before. The effort is worth it! You can also save the pumpkin seeds and roast them for a healthy snack!


Start by heating your ghee or oil on the stove with the garam masala. Do this until you smell the delicious aromas, but not too long as you don’t want to burn the spices.

Next, add in your pumpkin, rice, and dahl. I like to toast the ingredients together for a moment to let the flavors mingle.

After that, add in your water. I would start with half the amount and then let it cook for a while, maybe 10-15 minutes, checking it frequently and stirring to make sure the dhal is not sticking to the pot. Then adding in the rest. Add more or less depending on the consistency of Kitchari you prefer.

Cover the pot, and let the kitchari cook for 30-40 minutes, stirring frequently. You will want the dhal and rice to be soft and the pumpkin to be easy to pierce with a spoon.

How this recipe helps to pacify Vata.

Garam masala is a mixture of Coriander, Red Chili, Cumin, Clove, Ginger, Fennel, Black Pepper, Cinnamon, Fenugreek, Nutmeg, Cardamom, and Mace. The taste of these spices are pungent and sweet an is great for reducing Vata. The pumpkin is also sweet and full of moisture and makes for a delicious seasonal addition to this grounding recipe.
