Winter Wellness Recipe: Organic Beet and Red Carrot Soup

The clouds covered the sun as I walked through the Tuesday farmers market, in search of wintertime treats. My eyes gazed happily over stands overflowing with veggies from farms nearby. What was I going  to make for dinner on this cold and drying day?

 It didn’t take long for me to notice succulent red carrots glowing brightly as they sat, larger than potatoes, in a wicker basket. As they drew me into the booth, I noticed that the beets were just nearby. I was sold, tonight’s dinner was going to be beet and carrot soup! 

My inspiration came from the soup I had prepared that weekend at the Start at the Root: Radical Self Empowerment Women’s Retreat. It was a variation of a recipe from Ojas: A Cookbook for Blackberry beet soup. I figured I would put a bit of a twist on it and make it my own. I had also been inspired by the fact that the best meal to balance out both vata and Kapha during winter is warming and hearty soup. 

The heating spices in this recipe work very well for reducing the drying qualities of Vata. They also tend to the cold and dull aspects of Kapha. When we combine all of these ingredients, we have an easy to prepare, simple recipe to balance the Kapha and Vata in that accumulates during the winter season! 

Pacifies: Vata, Kapha, May increase pitta

Servings: 4-5 

Cooking time: 45 minutes


Organic Spices:

1/2 tblsp. Garam Masala

1 tsp. Natural Mineral Salt

1 tsp. Nutmeg

2 Cloves Garlic

1/2 Large Yellow Onion

2 Chopped Red Carrots

2 Chopped Beets

1 cup chopped cilantro for garnish

2 cups organic veggie stock

1 cup water( add more if needed)

To prepare:

Clean carrots and vegetables and roughly chop them along with garlic and onions. 

Put in a medium soup pot with veggie stock and water and add seasonings.

 Let boil for 30-40 minutes until veggies are soft. You can also use a crock pot and let the soup cook overnight. This will allow the flavors to truly mingle.

Use a blender, emulsifier, or food processor to blend the soup and serve!
